Watermelon Jalapeno Gazpacho 


Do you like soup in the summer? Me too!! Try this delicious watermelon jalapeno gazpacho that’s SO easy to make! 


*Long story that you don't want to read about how watermelon gazpacho saved my life*


INGREDIENTS 


1 seedless watermelon 

2 jalapenos 

3 cucumbers

2 red peppers

2 orange peppers

1 red onion

1 package cherry tomatoes 

1 large can crushed tomatoes 

1 cup veggie broth 

Warshester Sauce

Garlic Powder (as much as you want)

Salt and pepper to taste

Trader Joe’s Everyday Seasoning 

Cholula (optional)


Blend watermelon into liquid, if you don’t have a blender, a food processor will work. Chop jalapenos and seed if you don’t want it too spicy. I put everything else in the food processor until they are chopped into tiny pieces, but if you are a ‘chop it all up yourself’ kind of person, that’s fine too! Add crushed tomatoes, Veggie Broth, Warshester Sauce, and seasonings. The soup is best if you let it sit in the fridge for a day for the flavors to all get to know each other!
